Why did the assignment and quiz due dates change locations? Extra clicks? "Manage Assign?" It doesn't make very much sense.

I'm not sure if you've seen this or not, but since @ColtonSwapp initially gave you a response on 7/26/2024, there has been a further update that I think you will be pleased to hear about. I suggest that you take a look at the following blog post which was posted on 7/31/2024:
Updates to the Assign To Interface - Instructure Community - 610506 (canvaslms.com)
I hope this will be helpful to all of you.
Hello again everyone! I wanted to let you know about the Canvas Deploy Notes (2024-08-28) - Instructure Community - 612024 (canvaslms.com) where you can find more details. Instructure will be reverting things back this Wednesday, August 28, 2024.
Hello @ElizabethGarza1
I understand that you have some questions about assigning due/availability dates for your quizzes and assignments in Canvas.
ICYMI: A recent change in the UI for Canvas was pushed out on the 20th and there were a bunch of features that were updated. Throughout the last couple years, our Community members have provided quite a lot of feedback on how to improve certain functions such as this. Most notably, instructors have been requesting the ability to assign Modules and Pages to students for a few years. The most recent release has now made this possible, but it required a workflow change to the functionality of the Assign To box and how it is streamlined within Pages, Modules, Quizzes, Assignments and Discussions.
I know change is scary sometimes and it throws you off your groove. If you would like to add some constructive feedback on these new features, we would love to have you do that HERE.
Hopefully this helps!

I could not agree more, adding more clicks is both annoying and confusing. Really not sure I understand the reason for the change.
100% agree. This is nothing more than an inconvenience. There are now more clicks to accomplish the same thing, and the workflow is less smooth on top of it. For example, I used to be able to click a due date, then use tab and type the time that the assignment was due. Now, I can no longer do so fluidly, as I have to click yet another button once I've typed the time due the new dropdown menu.
With the new SpeedGrader UI, we are seeing student names appear in the page title even when the “Hide student names” setting is enabled. When using Classic Quizzes, there is no option within the quiz settings to enable anonymous grading, so we rely on instructors using the hide student names setting in SpeedGrader to…
Speedgrader chaning file name when being downloaded. Speedgrader: When downloading a submitted assignment, the file name is being changed to an unrecognizable name — (Student's actual name was part of the file name — changed for privacy.) Ideas???
We are all familiar with the standard Course Calendar, where assignment due dates are automatically added. However, at my institution, we structure our assignments as Challenges that develop over a period of time, rather than just a single deadline. Currently, the calendar only highlights the "end point." It would be a…
The current placement of the "Submit" button creates a "slip" in user behavior where habit-clicking "Next" leads to an accidental final submission. I think Canvas could easily fix this by: Moving the Submit button away from the navigation buttons (maybe above the question instead of below it) and/or Adding a "Confirm…
This is my first time using the new discussion "checkpoints". I'm hoping the multiple due dates are effective, but using the "checkpoints" does seem to create other problems: They only allow for ONE "reply to topic". The way I use discussions in some of my classes is to allow for students to ask MULTIPLE questions per…
