If you have permission (either as an admin or a teacher) to delete a course, the process is described in the How do I delete a course as an instructor? - Instructure Community - 1181 support article.
If your goal is to only not see the course's calendar, there is nothing that can be done because all courses appear in the list of courses in the "CALENDARS" area on the right-side (including unfavorited courses, which appear at the bottom).
