Yes, these are Essay questions. It's fine to not have the scores count toward the grade, but I'm trying to avoid points altogether (and the negotiating that comes with them).
I believe because of the way New Quizzes works, the score in SpeedGrader (along with something like the complete/incomplete indicator as it's related) are grayed out. Changes can still be in the grades area itself, but not SpeedGrader. I don't know if this is something that will ever change, and I do agree it's weird to be able to make a change in one area but not another. That does seem to be the intended design for now though.

I would like to bring this issue to the attention of anyone who is listening again. It sounds like @NathanielStahl might be using specifications grading, and I have been trying to help an instructor at our university who also uses specifications grading figure out how to do so in Canvas. It's not a great experience, and this is one example that could improve the experience if an instructor could, in SpeedGrader, change the dropdown and indicate whether something is Complete or Incomplete. Specifications grading does not usually use points, at least not in the traditional way. The instructor that I am working with does not use points but has a rubric for every assignment with four levels. The instructor needs to be able to go to SpeedGrader, use the rubric to assess and also mark the assignment as either Complete or Incomplete. The instructor can only do the first part of that right now and then must go to the Grades tool to mark each student's submission as Complete or Incomplete. Could the developers please allow the instructor to do this in SpeedGrader? This would improve the instructor's experience so much.
