Yes, you should be able to access your courses via the Canvas app on your iPhone. It won't be the exact same experience as accessing the same course(s) on a desktop computer or laptop (as the interfaces between an iPhone app and your computer are obviously different), but you should be able to do several things on the app that you could also do on your computer. (Check out the third link I've provided below for a comparison table.) There is a free iPhone Canvas Student app that you can download:

Hi, student here. It depends on the class and instructor, and sometimes the university itself. You can usually find a section about technology requirements in your syllabus that will state if the class is accessible by the iOS app. You can typically view each module as a summary of their components, but the links to the modules will be non-functional in the case it is prohibited by your class. It is useful if you can view your gradebook and typically get curious about what you scored on a particular assignment while you're out-and-about. Hope this helps!
