Assignment Calculation (Unpublished Assignments)

If the instructors have four assignments leading to the final project, but have unpublished one of them, does canvas calculate the final project grade from the published assignments or does it factor in unpublished assignments (that obviously will not have been graded)?

Your title mentions "unpublished courses", but your text is about unpublishing an assignment. I'll ignore the "unpublished courses" mention in the title.

You can only unpublish an assignment that has no submissions, so indeed they would also obviously have no grades. Those assignments should have no impact on the final grade, though I usually do double check myself the Canvas grades calculation in Excel.
