I'm trying to organize a self-paced orientation on Canvas for next year's summer intake.Any advice on how to set up a course where students can go through the material at their own pace but still stay on track?

You can make use of a combination of prerequisites and requirements in Modules. Prerequisites require chosen earlier Modules to be completed. Best used when there are requirements for earlier module items. Requirements mean that certain items have to be done, marked done or viewed (depending on the item).
For keeping them on track, I assume you do have some sort of a deadline in mind, but more of a guideline than a hard deadline.
For that, I'd suggest, at the end of each Module (if you have more than one), a very simple quiz or acknowledgement of completion of the module as a requirement, with a due date, but no until date.
You can play around with these according to your priorities.

Previously on the built-in rubrics, vertical view, the rubric items were collapsed. You could expand them to see details of each point value. As "Ideas" section is gone (at least for now), I'm posting a feature request here. Mobile app shows a list of students who have submitted or not submitted a quiz/assignment. Would be good to have this in web version as well as way to export csv.
