There is an 'I' next to a student grade with a 1% score in the course. What does this mean? The others represent the grade of A, B, C, etc. The student has not yet had an incomplete filed for them.

That very likely represents something in the grade scheme being used for the course. Unfortunately, most of us in the Instructure Community are other users from around the world, and we do not have access to your Canvas course or instance at all to verify this. It would probably be best tor each out to the Canvas team at your local school/institution (usually in the eLearning / IT / Digital Education areas) to find out for sure about this.
