How do I open up an assignment that is closed for only particular students who have not submitted on the due date?

The How do I assign an assignment to an individual stu... - Instructure Community - 717 guide should walk you through the steps to do this. The most important part is to remember to leave the "everyone else" group there with the original due dates, don't just wipe that out and assign to one student, as that will remove the assignment grades for the rest of the class.
