One of my assignments defaulted to the grades not being visible. Meaning no student can see the comments I left for them. How can I change that visibility? I don't want them to see each other's grades, just their own.

Students cannot see other student's grades regardless.
In the gradebook for the posting policy, do you by chance have it set to manual? If so, I recommend setting it to automatic.
I also recommend double checking and ensuring the grades aren't hidden. You can check that status by clicking the breadcrumb button next to the assignment name in the gradebook and selecting the "Post Grades" button.

When you are logged in to a Canvas course, you will see a three-lined icon (sometimes called a "hamburger" icon) near the top left corner of your course. To the right of that, you might see some text (depending on what page you are viewing) with ">" between some of the words. This is essentially a mini-navigation trail to show you where you are within your course. So, in the example within that Guide, it is showing the HIST101 course, then the "Assignments" section, and then an assignment called "Position Paper".

I have used Blackboard, Moodle, and now work at a Canvas university. When grading quiz items. I want the ability to view all of the students' responses to a single item at once. This could allow consistency in grading and speed up the grading process. This functionality has been available in Moodle for over 10 years.
