Can you clarify exactly where you'd like to see a new/different sort option? If you're an admin, there is the Admin -> Courses area. There's also Admin -> Users -> (choose a user) -> Enrollments box. There's also the "all courses" menu each user has. Are any of those the area you're referring to? I'm asking for clarity since you said Admin - Enrollments, which I don't think is a direct display.
Depending on the area, there may be some suggestions or workaround we can give to help things get sorted in a better way for you right now.

Canvas does not natively have this functionality but you might find the Canvas LMS Mods (Basic) - Chrome Web Store Chrome extension to be helpful. It is made by @Code-with-Ski / @JamesSekcienski.

When you are creating a quiz and/or also reviewing a quiz in Canvas after the class has taken it, the questions aren't numbered so after you get past the first few questions, there is no way to even tell what number you are on. Can someone change that?
