I have created 5 discussion posts for students in Canvas LMS. How do I reconcile the gradebook for the 3 that are not chosen so that the ones not chosen will not count against the student's final grade points?

You can set your students that do not submit to a certain discussion post as 'Excused' so they don't have a score that's going to affect their final grade. You will need to do this for each student individually. You cannot make the gradebook skip certain students from not counting it towards the final grade.
