I just logged in to try and share last years courses with new teachers and the courses from last year are completely gone...
Any clue as to how I can find them?

Generally speaking the Dashboard only shows current courses. You can find all of the courses, including those from past terms, under Courses > All Courses. Canvas has a page showing the process at How do I view all my Canvas courses?
