It would be helpful to add a feature to the moderate screen that shows each student's quiz progress in real time. Specifically, I’d like to see how many questions they’ve completed out of the total number in the quiz.

While not in the "Moderate This Quiz" area, are you familiar with the quiz log feature as described in the How do I view a quiz log for a student? - Instructure Community - 580 support article? You (or your Canvas admin) might need to enable it.
If you would like to take any next steps with this feature request, I would recommend that you go to the Canvas Ideas area of the community and (1) read the blog post that is linked to at the top (which refers to https://community.canvaslms.com/t5/The-Product-Blog/Turning-Your-Feedback-into-Better-Prioritization-and-Release/ba-p/637959) and (2) submit this as an idea.

When you are creating a quiz and/or also reviewing a quiz in Canvas after the class has taken it, the questions aren't numbered so after you get past the first few questions, there is no way to even tell what number you are on. Can someone change that?
