I gave a quiz. I published, students took the quiz. I see 31 attempts, when I press Quiz now. I can not get to the grading feature. When I select it, the feature says "unpublished." Is there anyway to retrieve the 31 attempts?

Have you checked to see if there is a duplicate of this quiz in the course?
Have you tried accessing SpeedGrader for the quiz from the "Grades" area of the course as described in the How do I get to SpeedGrader from the Gradebook? - Instructure Community - 925 support article?

Among all the things that I wish Canvas had is that one! Is it something that is been worked on? We had it in Blackboard (legacy) and I sorely miss and need in Canvas (we just transitioned to it from Bb). Please add this very needed feature!
