I have posted assigned readings as "assignments", as recommended by CANVAS support. They do not have any grade value but they still appear in the grade book, cluttering up the real graded assignments. How can I get rid of these spurious columns?

For assignments like this where students are just expected to read something and not really do a submission or get points, you can change the "Display Grade as"" setting for each of the assignments to "Not Graded." That will remove the points and submission types from the assignments and also remove them from the gradebook display.
