How can I add section headings to my New Quiz? For example, I have 3 different groups of questions. How can I let my students know that they are going to to new group of questions. But I still want it all of be on one single quiz.

I think the easiest way to do this would be to create a fill in the blank question type, include the directions, instructions, are other necessary details, and then ask them to type the word YES in the blank if they understand. Make these questions worth 0 (zero) points so it really doesn't matter what they type in. This should give you the ability to add new section information in a New Quiz without affecting the quiz score. Add one of these questions for each new section.
I would use Open Entry as the Answer Type. Other options make you include at least two options. See below for the editing view of this question. Notice it is set to 0 points at the bottom left.

Some other question types could work, but they also require more than a single option for answers.
