On Quizzes, if I set an essay question, how do I access the students' answers once quiz has been completed in order to mark it please?

You'd do that in SpeedGrader. The How do I grade quiz questions in SpeedGrader? - Instructure Community - 709 (canvaslms.com) guide shows you the steps you'd need to take to mark the questions.
