It looks like you took this screenshot from the Interactions Report.
@chriscas is right - "student interactions" register communication between you and the student, not students engagement in an assignment. Interactions are recorded when you contact the student via Conversations or when you leave a comment on an assignment.
It sounds like what you may be looking for is the Access Report. The course access report shows a summary of user participation in your course, but has to be enabled by your Canvas admins. This Canvas Guide has more information about Access Reports.

I took a look at the screenshot you provided, and to my eye as a Canvas admin for a higher-ed institution, that does not seem to be a screen Canvas itself would generate. The format and terminology used there doesn't match what I generally see in Canvas. Perhaps this is an external tool or something custom that your school/institution developed on their own?
Regardless of whether this is an institution tool or something else, the key to figuring out the data may be determining the definition of "interaction." At my institution, if we say "interaction" we generally are referring to person-to-person interaction, which could be through discussions, chat, video conferencing, group work, etc. For us, submitting an assignment or quiz wouldn't really be considered an interaction, and having a grade wouldn't signify interaction either. Your school/institution could be completely different though.
My best advice here would be to reach out to someone at your school/institution (probably in the eLearning / IT / Digital Education areas) to ask about this. The Instructure Community here is comprised mostly of other Canvas users throughout the world, and with this being something not native to Canvas, it's not super likely anyone here will be able to provide a lot of help with this. With that said, if someone does recognize the screenshot, they may reply back to you as well.
