I have a free account with Canvas. I am not connected with any school and have no admin. Is there a way to set semesters in my classes for grading?

Unfortunately, both terms and grading periods (splitting up of terms) in Canvas are functions that admins set up. In the free-for-teacher version, since there is no way for you to access administrative functions, those options will not be available. You can set course/section level dates in your course though, and depending on your needs, you could use assignment groups to create a subtotal grade for each semester of a multi-semester course.
