I created a quiz and removed it from my module. Did I delete if all together from my Canvas quizzes?

Look on your "Quizzes" screen within your course. Do you see the quiz listed there? If so, then you can re-add it to your module. Removing items from the "Modules" screen does not automatically delete them from the entire course. It just removes them from the "Modules" screen yet keeps those items in the "Pages", "Discussions", "Assignments", or "Quizzes" index pages ... depending on what you removed. If you notice, there are options to "Remove" items on the "Modules" screen, but there are options to "Delete" options on the index pages.
If, however, you cannot find your quiz, there is a hidden, unsupported trick that might work for you ... commonly referred to as the "Undelete" trick. More details can be found in this blog write-up: Undeleting things in Canvas.
