I know there is an auto-save feature for text-entries, but even though my page refreshed after my wifi died, all of my text was gone. Is there any way to recover it?

The auto-save feature isn't 100% fail proof unfortunately. Lapses in connectivity, browser issues, network timeouts, etc. can all cause issues with the auto-save feature. If you've come back to your discussion post and don't see the option to load saved content, it's unfortunately gone. I recommend anything longer than a paragraph to be written out on an application that can be easily recovered and isn't solely relying on your device, connection, and browser working without issues. Hopefully this helps.
When viewing a student submission, "Error while processing or retrieving the document" is shown in Speedgrader. The PDF can be read when downloaded, but this slows grading time down a lot. What can I tell the student to do differently? Is this a known bug?
