I notice that in New Quizzes, you get a System details captured right at the beginning of the log, at 0:00.
Sometimes you see it later on in the quiz.
Example: the image below the new quiz did a new system capture at 2:27.

I understand you have a question about the activity log for a students attempt in New Quizzes.
Typically the first item you will see in the log is the time and date a student began the quiz (System Details Captured). From there it should list activity about what the student did during that quiz session, such as answering questions.
If you see another activity listed as System Details Captured, it typically means that the student left the quiz taking page (by Clicking on the Return button) and returned to resume the quiz at another time.
