We are having a guest speaker and I would like to create 1 event for all three of my courses. Currently, I have to create a separate event for each course.

Unfortunately, I don't know of a way to do exactly what you're after in Canvas. Canvas has two calendar options:
What you'd ideally need is something in between the current options. You could submit this as a new idea for Instructure to consider in the future, but I think for now option #1 is going to be your best bet.
