Are you saying that you attached the incorrect rubric to an assignment within your course? If so, it's quite easy to remove the rubric from the assignment and then either create a brand new rubric or attach a different existing rubric to your assignment. In all of these Guides, look at the section on "View Rubric" for instructions and screenshots one where to delete the rubric:
These Guides also tell you how you can create a new rubric and/or find an existing rubric to re-add to the assignment.
