These are the Guides for editing your Canvas profile:
Both Guides indicated, "If you are allowed to change your name..." If you are not able to change your name, then you're going to need to work with the University of San Diego's Online Learning / eLearning / Distance Education team, and they should be able to help you. I found a page on their website that might be helpful:

There's an e-mail address at the top right corner of this page that you might be able to use to get quick help.

Hello @pjmcginty !Are you talking about the course card on your dashboard page, or are you in your course settings?
If you are looking to change the nickname of the course on the dashboard, then you will need to click the breadcrumb icon on the top right hand corner of the course card, then change it there.
If you're talking about your course settings, if it is not clickable, your canvas administrator disabled this feature and it is not changeable. If you must change the entire name of your course, reach out to your administrator.
