Where can I locate courses that are already completed? I checked "All Courses" but only can see completed courses from the previous summer semester.

I'd recommend reaching out to your school's Canvas administrator or their Online Learning / eLearning / Distance Learning team to see if they can help you with this question. They may be able to tell you more about the history of your past courses and where to locate those. Unfortunately, Canvas Community members wouldn't be able to access this information for you because we don't have access to your school's Canvas environment or any of your courses.
