Have you checked your "All Courses" screen in Canvas and looked under the "Past Enrollments" section? Scroll about half-way down this Guide to the "View Past Enrollments" section to read more about this:

Ultimately, you may need to consult with your school's Online Learning / eLearning / Distance Learning department to see if they would allow you access to a past course that you took at your school. Policies vary from school to school, so having a conversation with folks at your school would be the best option here.
