How do I add a column, such as Attendance/ Extra Credit, etc.?

All gradebook columns in Canvas are associated with graded activities (assignments, discussions, quizzes). If you want to create a column in the gradebook, you'll generally want to create an assignment. You can set the submission type to None or On Paper if you're just looking for a place to enter grades without having a Canvas submission.
