I typed in a student's name incorrectly when I set her up in Canvas. How do I correct the spelling of her name? I don't know where to click.

What version of Canvas are you using? My guess is that if you set the student up in your class, can you not just delete the student and then re-add them with the correct spelling?
You should be able to remove them from the class by going to the people page and clicking on the three dots on the right side.

When you say you "set her up in Canvas" are you an admin and created the student account manually? If so, here's the admin guide to edit a user's details.

I have used Blackboard, Moodle, and now work at a Canvas university. When grading quiz items. I want the ability to view all of the students' responses to a single item at once. This could allow consistency in grading and speed up the grading process. This functionality has been available in Moodle for over 10 years.
