How do I add a bonus to a total Quiz score?

If by bonus you mean extra credit, you can either add it from the grade book or in Speedgrader, you just add the additional points to the total score that is auto calculated.

You can add fudge points to a quiz score while in speed grader. However, if you want all students to get the bonus (you did not specify exactly what the bonus was or how the students were to get it), you can add a 0 point assignment into the assignment group and then put the bonus points in that assignment.
In writing the above I add a thought that maybe you were asking how to I add bonus point questions to a quiz. If that is the case, I do not think it is possible unless you give the bonus questions a point value of 0 and then go in and add the point values earned for each problem manually. For classic quizzes, the quiz total is based on the point totals for the questions, so you would have to do what is mentioned above. For New Quizzes, it is possible to have the quiz points be different from the points assigned by the problems. The issue there is that if you say the quiz is worth 10 points and the questions total 20 points, then a score of 19/20 on the questions is 95%, so the score given to the student is 95% of 10 or 9.5. So once again you have to create 0 point assignments and then grade them manually.
