Is there a way that we can download completed rubrics of students in an image format so we can share it via another platform/email? Trying to avoid screenshotting and an extra step for teachers.

Thanks for posting this in the global Canvas Community!
There is not a way to do this unfortunately. Currently rubrics will only be visible from within the submission details/view feedback screen from the students perspective.
Taking a screenshot and sharing the image is definitely a work around for this. I was able to see that there has been some interesting conversation about a possibly feature request that would allow you to export a rubric used HERE.
I know that this is not the answer you were looking for and I apologize for that.
