If a student makes a second attempt at multiple choice questions on a midterm (classified on Canvas as a quiz), do their first answers disappear, especially essay questions?

In addition to the information @Chris_Hofer provided, I believe the following is true:
Depending on the settings of the quiz, it is possible for students who take a quiz multiple times to see all of their attempts and how they answered the questions.
You will have to restrict what the students can view on the quiz and then manually change those after the until date for taking the quiz has passed.
It will depend on which quiz version (New or Classic) that you are using. You will probably want to set the grading mode to manual in the gradebook for that quiz as well to keep students from seeing their score for the quiz they took.
