I can not see the grades after I edit the quiz after the exam. Now all my student's grades are under an book looking icon. How do I get ride of the icon?

That usually indicates that there are questions on the quiz that have not been graded yet. for example if you have an essay question, you have to assign points to the problem on the quiz. Once all questions have points assigned to them, then the grade will appear.
if you are using Classic Quizzes, there is an easy way to see which problems need grading. I do not think there is in new quizzes - someone else may be able to answer that part.
