I have a student with an extension beyond the end of the semester. How do I re-open Canvas Gradebook to enter his assignments and have Canvas compute his final grade?

You'll probably want to reach out to your school/institution Canvas team to find out what the procedure is there. Canvas is pretty flexible around this, meaning every school/institution has a slightly different way they handle this, which makes providing an exact answer to the global community almost impossible.
Using my institution as an example, we have this all automated, so any student with an approved extension has extended access to Canvas as well (along with the corresponding course teachers). Since you're asking, I assume the process for your school/institution much not be as automated, but they should have a form or some other manual process available for this scenario.
