Why is it when I embed videos or insert images in my Announcement they only appear in the Announcement on Canvas and not in the email that goes out?

This is a great question, and I think that's just how it's designed. The email (if notifications are enabled for the user) technically only provides a preview of what the announcement is, it isn't designed to include every detail (such as fonts, text sizes, images, etc).

It would be very beneficial for observers (parents) if they could view instructor comments. If they had access to this information, they could better understand the grading of individual assignments and better understand the errors that their student made.
