I need to see what happens to the moderate data/information during a quiz. But when I take the quiz as a "test student" I don't get any moderation data. Suggestions?

I'm not sure what your role is at your school (Teacher, I'm guessing?), but you might try using an actual dummy student account. If you are not a Canvas admin, maybe talk with your school's Canvas team to see if they would be willing to add a dummy student account to your course that you could use to test things out.
Also, I'm not sure if you are aware of this or not, but Canvas also has a "test" environment where you could test things out without disturbing anything in your school's Canvas "production" environment. The "production" environment is the Canvas site that you typically log into on a daily/semi-daily basis. I always encourage people to use this site if they don't want to mess up anything in their "production" site. It's literally for "testing" things out. Also, be sure to log out of "test" before you return to "production" ... just so you don't get confused about which site you are in. (I've done that myself, LOL!) Here are a few Guides for you:
