Question

I am trying to assign an assignment to students but set two different lock dates so that students with extended time lock later than students who don't need extended time. I'd like to be able to do this without typing in each individual kid for every assignment.

Differentiation tags should help, but they're new, and may not be available at your institution. You may need to ask your local Admin to enable them:  Differentiation Tags • FAQ - Instructure Community - 639336

Have you looked into Differentiation Tags • FAQ ? They are a great way to create groups of students (sports, clubs, extra time, accommodations, etc.) allowing you to filter your gradebook and/or even assign assignments to them that are personalized.
