Has Canvas developed a way to pull a report of all in the markbook in a class section, for example, or the whole course, to see their turn-it-in percentages and the AI match?

If you are an instructor, I would recommend that you contact your Canvas or Turnitin administrator. There are some statistics/reports that are available to administrators that might be able to help with what you are looking for.
If you are a Canvas or Turnitin adminstrator, log into your Turnitin account and view the statistics/reports that are available.
In my opinion, the statistics/reports that are available are OK-ish but they could also be better. If you need anything more, you could reach out to Turnitin Support or your Turnitin rep or possible design something by yourself.
