I am wanting to access an Archived Canvas class page, and am wondering how I can do so.

I'm uncertain if your setup is the same as mine, but when I first log in, I click on "Courses" and the Courses tab expands to the right. From there, I click on "All Courses" which will give you access to all of your past enrollments. On that screen, all you have to do is click on each course you wish to view.

Unless your institution has a formal course archival process (you would need to check with your institution's Canvas team for guidance), the process that @WendellDuncan said is what the teachers at my institution do.
