This just started a few hours ago. When I try to assign something (discussion, assignment, etc), the assign box is greyed out. I have logged out and in. Nothing seems to be working.

What is the end date setting on your course? The first thing that comes to mind when a setting is greyed out is that the end date for the course is passed, so the course has gone into "read only" mode where students can no longer interact with the course....

I would recommending checking back with your institutional support, as this sounds like our use case where we lock the assign to function which is served automatically from our SIS.
Alternatively you may not have the role permissions to allow you to assign - again your in house Canvas support should be able to help.
