I'd honestly recommend against linking to a specific Canvas file/folder from within a word document. If you reuse that document in future courses, the link will not work properly as it will point to the old course. In addition, if anyone outside of the course gets access to the word doc, they'd not be able to use the link either. This is just my opinion, though I think it's pretty solid advice in general.
If you must include a link in your word document, you can just copy the URL shown in your web browser when you're viewing the folder (or file) in question, then paste that link into Word.
