On the far right of some assignments that have been submitted, they show a color tab of blue and some show yellow. What does this mean?

The Canvas Student Guide has a lesson called How do I use the icons and colors in the Grades page? that explains what the colors mean. I don't see anything about color tabs -- maybe we just call them different things? There is a red missing and blue late badge, but they contain the words within the badge, so I don't think that's what you're talking about. It does mention custom statuses, though.
There is also an originality report (often used to detect plagiarism), which indicates the percentage of text matched by the originality tool. Their example image shows yellow and red. This is the closest I can find to what you're describing.
That's all from the student side, which I'm not very familiar with. From the instructor's side, colors are assigned to the background of the gradebook. By default, blue is missing and yellow is excused.
I have used Blackboard, Moodle, and now work at a Canvas university. When grading quiz items. I want the ability to view all of the students' responses to a single item at once. This could allow consistency in grading and speed up the grading process. This functionality has been available in Moodle for over 10 years.

My class policy is that late assignments can be accepted at professor discretion, but they will have a 50% penalty. This is a gate you pass through once, and there are no further penalties.
