an image in a new quizzes quiz is 1500x200 pixels and shows as appropriately large in the question editing window. When students take the quiz the image is maybe 200x200 pixels and thus the text is not readable

That is odd - the image should be larger if the one you uploaded is large. Did you upload this first to files or just directly to the question itself? When you go to student view or preview is it also small for you? It's a PNG or what type of file? It honestly may be best to contact Canvas Support directly for this issue. They can look at the specifics of the image, the quiz, the students, etc. By all means feel free to respond here with more details but it might be faster to speak with Canvas Support:
