how to edit the images used in the module tiles on the course overview/homepage?

It sounds as though you are referring to a Page within the course, not the course tile on the Canvas dashboard.
Has the course been shared with you as a template? Templates often contain a Module with the resources used to create the Module along with instructions for making edits. You also can look in the Files of the course to find the images that were used (and possibly instructions). In order to edit the images, you will need to go into editing mode for that page and replace the images with your own choices. Be aware of image dimensions and resolution.

Go into that course, then go to "Settings" on the left.
Under "Course Details" you will see an image. Click on the 3 dots, and select "Chose Image."
