How can I view when a teacher posted an assignment.
I don't think it's easily done, @DeletedUser . I did some testing and my admin user was able to see when a teacher user viewed pages and participated (like posting to a discussion) but not when an assignment or other item was created. Assignments also lack page history like content pages do.
I'm curious: why do you want to know when a teacher posted an assignment?
