When I set the grade posting policy of a classic quiz to Manual in the gradebook, will the quiz still be auto-graded?

Yes, the quiz is still auto-graded but none of the quiz response options (score, correct answers, etc.) are visible to students until the grade has been posted. At that point, all of those details become visible to the student.
