Can I set the session time out for different pages? I don't want student to be timeout when they stay in assignment page.

I don't believe this is something that's currently possible in Canvas. It's an interesting idea, but as a Canvas admin myself, I think our institution's security team would shoot this down fairly quickly even f Canvas could do it. Our sessions seem to last at least a day, are yours shorter than that and causing issues for students? I *think* your Instructure CSM may be able to adjust the overall timeout for your instance, so that could be something you could check on.
