Re-open a discussion for one student? A quiz?

I set an "available until" date for discussions and for quizzes. The available until date has passed. Yet, I have reason to re-open the discussions and the quizzes for one student. I would like to do so without entirely removing the available until date. Is this possible?

No for discussion. For quizzes/assignments, you can create an override under "Assign" section on the edit page: https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-assign-an-assignment-to-an-individual-student/ta-p/717
