I have found access to past courses but there is a class that I took and completed but I don't see it on the list. Is there any way I can gain access to that course again somehow?

This is a question that you'd need to ask folks at your school. Usually, your school will have an Online Learning / eLearning / Distance Education team of some kind that would be able to tell you their policies on accessing past courses within Canvas.
