In the instructor view it is showing that it has been published, however, when I switch to student view, they have not been published.
The first thing that might be causing it is your browser's cookies and cache might be messy. Start by clearing the cache in the browser that you are using. Is this reproduce-able in a different browser would be my next step.
In the assignments, are they marked with an available on date? Meaning they are not available to the student until a specific date? That would cause them to not appear for the student.
